This is a practical session of the catering department by the students. Their madam is observing and directing what they are doing. The end products are the pastries in the lady’s right hand, the jollof rice, the fried chicken, the drink and the fruits in front of the lady who is on the left hand of the picture. We teach how to prepare local and continental dishes, snacks or cookies, beverages. We take orders to serve at functions, being it public or private. We make family life better through cooking and we run tutorials or tips on local information centers most of the time. The students in the picture are catering students and what they are doing is food preservation called HOME CANNING and PICKLING mainly vegetables as seen in the picture. The first process is to wash the vegetables and peel the outer membrane as done with the tomatoes but with green pepper the seeds are removed. The peeled tomatoes and the green pepper are put together in bottles and boiled. It can last for a minimum of one year if done well.

The vegetables used for the canning are from the MCSOT farm and they are highly organic. You can check our Agric farm department, MCSOT requests that individuals, households, restaurants, food vendors, schools etc. will take up a training course in canning in our catering department. You can make a whole lot of money from this.


Cooking


Students learn to prepare, preserve, and store foods safely. They work together to complete each part of the process and produce an end result of hundreds of jars of food to save and eat in the future.
